In Mexico, September 16th is celebrated as the date of Mexico's Independence from Spain. Late in the eighteenth century, the middle and upper classes in Mexico began to question the structure of their society. Influenced by the revolutions in the United States and France, they too decided they wanted freedom of speech, a representative government, and a restriction of the over bearing power of the Catholic Church. They determined that the only way to reform their society would be to gain independence from the Spanish, whom they felt had oppressed them for over 300 years. (Cinco de Mayo or May 5th, is when Mexico won a battle against the French in the city of Puebla, Mexico in 1862.)<br />
<br />
In late hours of September 15, 1810, Padre Miguel Hidalgo y Costilla, a Catholic priest in the town of Dolores, Guanajuato, led his people in rebellion against the Spanish. He rang the church bells, calling the Indians and Mestizos (those of mixed Spanish and Indian blood) to mass. He exhorted them to rebel against the Spaniards with cries of, "¡Viva México!" "¡Viva la independencia! ("Long live Mexico! Long live our independence!"), which is the now-famous "Grito de Dolores," or cry of Dolores. Hidalgo then ordered the arrest of the town's Spaniard population. With clubs, slings, axes, knives, machetes and intense hatred, the Indians took up his challenge.<br />
<br />
The people's army marched to Mexico City, fighting all the way. When they finally reached the capital, they hesitated, and many soldiers deserted. Before the year was over, Father Hidalgo was captured and executed. His army fought on, however, and his "Grito de Dolores" became the battle cry of the war. The bloody fighting raged on until 1821, when Mexico finally succeeded in winning its independence from Spain.<br />
<br />
Every year, on September 15th, the Zócalo, or main square in Mexico City is decorated with flags, flowers and lights of green, white, and red. People sell confetti, whistles, horns, paper-machie helmets, and toys in the colors of green, white and red. Street vendors sell all their favorite foods. At 11:00 p.m. the crowd becomes silent, as the president of Mexico steps out on the palace balcony, and rings the historic bell that Father Hidalgo rang to call the people. Then the president gives the Grito de Dolores. He shouts "¡Viva Mexico!" and "¡Viva la independencia!" and the crowd roars the words back at him. Fiestas celebrating independence take place that night and the next day-throughout Mexico. The air is filled with confetti and streamers. The 16th is a fiesta day-full of music, bullfights, rodeos, parades, more fireworks and plenty of dancing, food and drink. <br />

snip the stem diagonally just below a leaf joint thingy, then remove the leaf/leaves at the bottom, then dip in rooting hormone and stick it in either damp seed compost or a coir jiffy pellet. Then I pop them in a propagator out of direct sunlight until the roots have started growing nicely<br />

Just thinking about upping the plant count this year by taking cuttings from my overwintered plants, now I assume you do this the normal way by cutting off a long stem, taking off all the lower leaves then dipping the cut end into some rooting compound then into a pot full of lovely fresh compost.<br />

Here are a few useful 'how to tips' to give you a good chance of a more successful cop this year. </span><br />

Keep the chilli plants uniformly moist and apply a liquid feed too. The heat trapped in the greenhouse will greatly be appreciated by your little chilli plants.</span></span></span><br />

<br /><br />If you end up with some weird chillis at the end of your season you are not planning on eating then why not use them to protect your wild bird seed in the garden from the ever resourceful cheeky squirrel!<br />
<br />
Set your discarded chillis our in the sun or in a warm ventilated place in your house such as by your boiler to dry them out. Once dried you can grind them down using a pestle and mortar or, I use a coffee grinder. Take care though as even if you are a seasoned consumer of all things chili the dust created by the process can irritate your eyes and also educe coughing fits. be sure to wash your hands when you are done to, removing any last dust. Make sure you store the chilli dust in a sealed container.<br />
<br />
When ever you feed your bird population in your garden now sprinkle over a little of the chilli powder, the birds don't mind the heat but the squirrels don't like it and will end up finding a new source of food to seal instead.<br />

This season is finally starting to have progress now the British summer has appeared for a few days. Blow are the chilli plants that should hopefully keep me stocked up later this year. They include jalapeño, scotch bonnet, Hungarian black, ring of fire ( from Dorset chilli farm) cause red pepper, mystery seeds I am hoping are yellow habarnos from last years west dean chilli fiesta, chilli willi plants, Serrano chillies from the mexican restaurant wahacca. They are starting to look good now so fingers crossed for a good year. <br />
<br />
Six lucky plants will be transferred to greenhouse sensation chilli growing stations to try and boost their crop.<br />

Over recent months my work has unfortunately taken over all of my blogging time but has not quite taken away my chili time yet. I have worked my way through around 30 bottles of chilli sauce since my last blog and have begun this years growing in February.<br />

This year i hope to be successful growing my own jalapeño, habanero, chilly willi chilli, Hungarian black chilli, yellow scotch bonnets, cayenne peppers, ring of fire and Serrano Picked up from the wahaca restaurant in London.<br />

Our family run business based in Herts create chilli sauces, chilli chocolates, and soon locally pressed chilli infused rapeseed oils. This year we have been invited to a local chilli festival in Bedford on fathers day, however we have no marquee, banners, tables etc which are essential to have for a stall. Best of all purhasing anything from the institute will help to support them in ther future work.<br />

The Chile Pepper Institute is an international nonprofit organization devoted to education, research, and archiving information related to <em>Capsicum</em>. Since its inception in 1992, it has been a recognized research institute in the College of Agricultural, Consumer and Environmental Sciences at New Mexico State University.<br />
<br />
The Institute collaborates with the New Mexico State University Chile Breeding and Genetics Program to preserve chile germplasm, of both cultivated and wild species, and to advance the studies of chile pepper diseases. Furthermore, the Institute seeks to be an authorative source of all types of information regarding <em>Capsicum</em><br />

I have visited their farm and they shop is well worth dropping by if you ever get the chance.<br />

This week I have been trying their <a href="http://www.scorchio.co.uk/product_info.php?ref=91&products_id=1311&affiliate_banner_id=1" target="_blank">Hot Habanero Sauce</a>. The bottle is 100ml and has their great logo at the top with an almost innocent looking picture of a chilli giving no real indication of the Rating 150,000-200,000 Scoville heat contained within. <br />
<br />
The bottle says <em>"The Habanero is the King of chillies - a great flavour and VERY HOT. The chillies used in the sauce are grown and cooked on our farm."</em><br />
<br />
To get you thinking this sauce is Winner of a Gold Great Taste Award 2005 and 2007. As well as winner of a one-star gold Great Taste Award 2010.<br />
<br />
The ingredients highlight the purity of the sauce 50% fresh Habanero chillies from their farm cider vinegar, fresh lemon juice, salt. The habanero chili is a very fruity chilli packed with natural flavour alongside its impressive heat rating so not much is needed alongside it. I am pleased the South Devon Chilli farm have stuck to this and only added sweet sharpness to the powerful flavour.<br />
<br />
Its true to say that and hot sauce containing habanero is mainly about heat, but the taste of this one accentuates all that is good about the habanero providing a rich full flavour not found in many equivalent sauces available in teh market. the sauce itself is quite runny as its mostly pure but not too runny than something like Tabasco's version of the Habanero sauce<br />
<br />
<a href="http://www.scorchio.co.uk/product_info.php?ref=91&products_id=1311&affiliate_banner_id=1" target="_blank">South Devon Chilli Farm Hot Habanero Sauce</a> can be used on its own dashed onto any food but is ideal for adding heat and flavour to spicy dishes. A few drops go a long way when used as a table condiment.<br />

The hot sauce uses the wonderfully fruity and powerful Habanero chili pepper so it is sure to provide a kick and if the Christmas day turkey is dry then you can add some of this. The bottle label even has space with 'To' and 'From' sections so you can personalise your gift! <br />

On opening the colourful packaging you are greeted with an innocent bar of white chocolate noticeably speckled with hidden treats. Once you bite into the creamy white bar you are greeted with the delicate warming orange spice of the bergamont balanced with the natural vanilla. The cocoa nibs provide you with a crunchy texture and then BAM! almost unexpected you get the heat of the naga jolokia which is enough to gain the notice of a true chili head but not to much to make it unpleasant or an endurance test. Don't fear or avoid this chocolate if you don't like the power of the naga, the mix of the flavours may sound complex and powerful, possibly too many, but I assure you they are skillfully blended and balanced generating a moreish delight. This blows other chilli chocolates out of the water who just have two flavours and no texture. As I sit here there is one square left from the bar.... I must find some more...<br />

You may be thinking... this sounds good. </div>In the South east Asia book Gordon sets out to discover the flavours of Asia, through Thailand, Cambodia, Malaysia and Vietnam. I have travelled through most of these countries so am highly critical about the food served to me back in the UK claiming to be south east Asian. I was please to see that the dishes i had hoped to be featured like Tom Yam Goong Nam Khon, a divine hot and sour prawn soup. Ngah Poh Kai Fan a slow-cooked clay-pot chicken and Karipap the Malay answer to a Cornish pastie. Some of these of course carry Gordons touch with minor adjustments but the basic authentic concept is there.<br />

</div>One of my favorite snack dishes in the book can be found on page 43. coconut prawns with a sweet chili sauce I have tried other recipes for the same dish without success or that flavor I was chasing. This one left me with an empty plate very quickly.<br />

This accompanied the TV series if you missed it don't worry as everything you need to know is in the book. there is some stunning photography travel stories combine depicting a richly-textured portrait of a continent. Age-old traditions and secrets that underpin their native dishes are discussed and taken on by Gordon in the recipes. He meets characters with fascinating lives, shares delicious meals in beautiful surroundings, and is invited to take part in the customs and rituals.<br />

There are over 100 new recipes showcasing the very essence of these cultures and cuisines. There are unique tastes and styles from across the region, with a wealth of enticing ingredients of course including chilli peppers. Don't let unfamiliar recipe names put you off they can all be easily sourced from any Asian or Thai shop that are featured in most towns these days and Gordon sometimes suggests alternative ingredients. <br />

The tequila menu looked like some thought had gone into it. I noted that bloggers and facebook users had also been consulted. Next time count me in if you have space. For food I wanted all of it Wahaca selection particularly the pork pilbil as this dish is hard to find in the uk and not often done well. But if you can find a good one... I went for the Wahaca Selection<br />

3 pork pibil tacos, 3 winter vegetable tacos, 1 large huitlacoche quesadilla, 2 black bean tostadas, 2 chicken taquitos with green rice and black beans for two people to share. I was notably speechless but had a large grin on my face. My search for a positive Mexican experience and great food in the us in finally over. There are other restaurants available sure but Wahaca is the new KING.<br />

The pilbil was juicy and full of flavour, the quesadilla not just a pile of cheese but of taste, tacos prepared the authentic way with one of the supermarket style flavours fooling the public. The black beans and salsa mixed perfectly with all flavours and the whole experience is something I cant express how good it was. When you go to pay.... get this they actually give you some free chilli seeds too to spread<br />

I have recently come back from Barcelona. Over there the food generally does not feature chilli at all so I did struggle for a week or so. However at almost every cafe and bar you can get your hands on Padrons. from a market you will pay about 1 euro for around a kilo. in the tourist traps you will pay up to 9 euro 50 for about 15 peppers!!!! so do shop around if you go.<br />
<br />
Basically all you need is a pile of Padron chili, some oil and salt. Cold beer is also essential but optional :)<br />
<br />
<ol style="text-align: left;"><li>Wash the peppers thoroughly in cold water and pat dry. </li>
<li>Place a large frying pan over a high heat, add the olive oil and heat until smoking then place the Padrons in</li>
<li>Cover and cook for 4-5 minutes, turning occasionally using tongs to avoid the oil, until blistered and slightly charred. </li>
<li>Drain the peppers on kitchen paper, sprinkle generously with the sea salt and serve with your optional beer. </li>
</ol><br />
Enjoy and prepare to become addicted. I have grown Padrons this year and will soon be eating my first crop. why not have them as a starter or even in stead of popcorn with a movie.<br />
