CaJohn Select Chilli Purees Fatalii Review

@CajohnFieryFood have produced a fantastic range of select Chili puree products that are very useful for everyday use or to add power and flavour to your cooking.

"CaJohn selects only the finest chiles for his signature line of purees. Ground fresh from the fields, they are blended with distilled vinegar. Citric acid and Vitamin C are added to preserve color, then they are bottled immediately. The result is a minimum of 80% chile solids, more than four times the content of most hot sauces. These purees are wonderful for inclusion in your culinary creations, or sauces of your own design."

The Fatalii is known for it's extreme heat and citrus flavor. Because of such flavor and heat it makes for a unique hot sauce that usually compromises of other citrus flavors like lime and lemon. The walls of the peppers are very thin which makes it very easy to dry. After drying they can be used as powders The Scoville Food Institute lists the Fatalii as the sixth hottest pepper with Scoville units ranging from 125,000 ~ 325,000 units.

I had not tried the Fatalii chilli before and loved this puree, I would relates the taste similar to that of a scotch bonnet or habanero. very fruity and very powerful but very tasty too. Adding this sauce to a chilli con carne woud produce a very unique dish and certainly blow you head off if you add too much.

CaJohn Magma Sauce Review

CaJohn's Magma Hot Sauce
@CajohnFieryFood has produced one of the most creative sauces I have seen for a while CaJohn's Magma Hot Sauce. I have had this one on my shelf for a while admiring it and saving it.

Finally I have opened this intriguing bottle from the USA to see what it is all about. The first reason you should buy this sauce for your collection is that it looks very very cool and you will have nothing like it already.

The slogan says "shake to wake the sauce."At first glance you could mistake it for water, but tilt, then shake the bottle and Magma comes to life. A full 1 million Scoville units floats on top of the vinegar. It hides under the shrink sleeve until you turn it over. Shake it up and it changes color, set it down and the capsaicin settles back to its hiding place.



I like hot sauces with warning and this one is no exception "WARNING! An eruption of disastrous proportions. EXTREMELY HOT!"


The Ingredients are very basic Vinegar, water, salt and oleoresin of capsicum and let you know that it really is basically Magma inside. When you try it you wont be disappointed and will see why there is a warning. CaJohn's Magma Hot Sauce is great for a party piece and for adding to cocktails particularly the bloody Mary. It can also be added to dishes to give a very warm flavour, enhancing stews and soups. Where will you use it?

Chilli Cocktail Ideas

Have you ever thought of making a chilli cocktail? Here are a few twists on some classic favourites that are worth a try and gaurenteed to spice up an evening of drinks. People have learnt not to steal my drinks at parties anymore at least!

Frank's RedHot Chile 'n' Lime Hot Sauce - 354mlBloody Mary
Tomato Juice ( I use V8 Vegetable juice)
A Good Brand Vodka
Celery
Worcestershire sauce

Flatliner Shooter
Pour the Tequila to nearly half way of the shooter glass CaJohn's Frostbite Hot Sauce
Slowly pour in sambuca against the side of the glas so it creates two levels.
Finally add the  Frank's RedHot Chile 'n' Lime Hot Sauce drop by drop to taste
Knock back the shooter and enjoy


Hot Margarita
3 parts any good aged tequila (Ocho if you can get it)
3 parts Lime Juice
1 part Triple Sec

Classic Frostbitini
A shots. Vodka
a dash of Vermouth
Caipirnha / Caprina
50ml Cachaca
1/2 Fresh lime
2 Brown sugar cubes
3-4 drops of CaJohn's Frostbite Hot Sauce
Cut the lime into eighths placing into a glass with the sugar cubes and muddle
Fill the glass with crushed ice and top with Cachaca
Stir and serve with a straw

Got this CaJohn’s hot sauce to experiment with as I was curious and I like most sauces in their range. The chance to put some heat in my drinks and cocktails with Frostbite Hot Sauce ‘The world's first white hot sauce’ caught my attention. It has a droplet insert fitted so you can add a small drop at a time. Just as well as you only need a tiny amount to have an effect! A bottle of this stuff should last quite some time. The front of the bottle says “Nothing frosty here! Extremely Hot” and I can definitely vouch for that.
It's has a watery white appearance and you can see small crystals floating in it. You need to shake the bottle before use. It disappears in any drink except for maybe the odd crystal floating on top. I was a little unlucky when I tried my bottle and put some drops on my finger to test first before adding it to a drink. I think I managed to get one of the pure crystals as it blew my head off and I’m used to strong heat.

There is some controversy over the actual heat of this sauce and dispute among chilli heads. The sauce is extremely hot and not for beginners with somewhere between 500,000 and 1,000,00 units linked to its heat. Using only the ingredients vinegar, water, salt Aquaresin of Capsicum. Based on my first experience I would class this more towards the 1,000,00 units but that was neat from the 148ml bottle. But many would disagree. I think it varies depending on what you mix it with or if you get a crystal. Either way it’s a great for your collection and for a whole range of drinks as it mixes right into the drink and doesn't float at the top like most hot sauces or extracts. Pick some up at Scorchio.
