Meet @DartmoorChilli Farm

I would like to introduce you to another British chilli farm. Their way is  natural and holistic without the use of herbicides or pesticides making nature do all the hard work.

The are proud of being a green company with a very low carbon foot print and have been awarded a Dartmoor First award for environmental sustainability. Impressively the chilli nursery is off grid, as Dartmoor chilli farm create their own electricity with solar panels and a wind turbine and harvest rain water for our plants

Over ninety varieties of pepper including sweet, mild, medium, hot and extreme are regularly produced from seeds sown in January using the biodynamic cycle.

Chilli Festival Planning 2012

It is the start of another year and the excitement of planning ahead for another year 
of hot sauce, chili growing and chili festivals. Will Grim Reaper Foods win yet another award this year at the Fiery foods festival? Will any new producers appear with great sauces?


Here are a few dates below, I will keep these up to date on the chilli festival tab at the top of the page. If your festival is not listed please let me know an ill add in a link.


This year for me sadly The great West Dean Chilli Fiesta have decided to alter their regular date so I will not be able to attend but I hope to at least be at, Chlli Fest Shoreham, The fiery foods Festival in Brighton and the Upton Cheyney Chilli co this year. See you there!

Smokin Devil Sauce

Chillipepper Pete's Chipotle Smokin'Dragon Hot Sauce@CPPete are my local masters of hot sauce production as as you know I am very fond of the sauces they have produced over the years. This  Smokin Devil Hot Sauce is usually among my regular stock cupboard of hot chili sauces. For those of you who follow Chilli Pepper Pete this sauce has also been known as the 'Smokin Dragon' hot sauce. Unlike other chipotle sauce is different as it also contains tamarind and other fruits ingredients such as pineapples and grape juice. As a result this sauce is good not just on its own where ever you would choose to dollop it. Its versatility and real strength is seen when use use it in your cooking by adding to dishes like a curry or chili con carne.

The sauce itself is a mild one as you might expect and is quite thick in texture. The unique flavours balance well with the rich smokiness of the chipotle. In our house I have to fight my partner for this sauce as she often claims its hers and 'needs it' for her cheese on toast in the evening.

Chilli Pepper Petes Naga Headhunter Sauce

Chillipepper Pete's Naga Headhunter Sauce@CPPete has brought out a new Head Hunter hot sauce based on the great naga chili pepper. Some of you may remember that there used to be three head hunter sauces. In my opinion the best of the three is winning the race. The bottle says:

"This sauce has been a New age ketchup for the seasoned chilli head. Use liberally 3 times a day. Even works with pudding. Splash it all over."

Chilli Pepper Pete makes great sauces in my opinion and he is without doubt my favourite UK producer. I have long been a follower from his early days at my local markets. Many of his sauces are award winning power houses with heat not for mere mortals. This all natural Head Hunter Naga based hot sauce from chilli pepper pete is a delicious mix of sweet and savoury mixing together pineapple, tomato, onions, fresh naga chilli, dried naga chilli, Aleppo chilli, sugar, garlic and salt. The combination of enough heat from the naga to satisfy and a wonderful flavour that you will find any chili head reaching for again and again however hot you like your sauce. Frank's RedHot Chile 'n' Lime Hot Sauce is a very tasty all round hot chili sauce from the USA. This is the kind of stuff you can keep in your cupboard and bring out for everyone. Where you might reach for Tabasco sauce think about giving this one a try. The bottle says Frank's RedHot Chile 'n' Lime Hot Sauce  is a party-hearty surge of flavour. A heat wave of chile and spice blended with a tangy burst of citrus, it's a match made in hot sauce heaven.

The hot chili sauce uses the Cayenne red pepper which gives it a distinct flavour without the intense heat of other sauces making this accessible to all people that want to add some warmth to their food. Once you have tried it you instantly see it will go with most foods tacos, steak, nachos, salsa, salads, fish, fajitas, burgers chicken....... I have already used this in tacos last night and its great click on the picture to pick some up.

The sauce is also great for adding to drinks as its quite thin making it perfect for experimentingwith a Bloody Mary or where ever your imagination will lead you like a Flatliner Shooter:

Pour the Tequila to nearly half way of the shooter glass
Slowly pour in sambuca against the side of the glas so it creates two levels.
Finally add the Franks RedHot Sauce drop by drop to taste

I like a good habanero sauce with my eggs in the morning and this recent addition to my hot chili collection hit the spot this morning. Marie Sharp's Habanero Pepper SauceMarie Sharp's Habanero Pepper Sauce - 148ml claims to be the finest product of its kind. The make a change from other hot chili sauces you may be familiar with this unique carrot-based blend achieves the great balance between flavor and heat, the addition of lime sharpens up the sauce too. Marie Sharp's secret homemade recipe utilizes the potent red Habanero pepper. The peppers used are produced in the fertile paradise of Belize. The bottle claims that her red Habanero is considered to be the hottest variety of pepper known to man. Though these days we all know other hotter varieties of chili have been produced such as the wonderful naga pepper featured in may popular sauces today. South Devon Chilli Farm Smokey Chipotle Sauce

South Devon Chilli Farm Smokey Chipotle Sauce@sdcf_co_uk have produced a real marvel of pure smokey delight in this bottle South Devon Chilli Farm Smokey Chipotle Sauce. I recently visited their new farm shop and picked up some supplies and this hot sauce didn't last long once opened. This Hot sauce has a pleasant gentle heat that just adds flavour to anything you put it with. When you pick up the bottle you see the description....

"We oak- smoke our own jalapeno chillies to make the 'chipotles' which give this sauce its wonderfully rich flavour.  use it as you would a ketchup, or as a party-dip (on its own or mixed with yoghurts or sour-cream).  A traditional Mexican sauce, great for wraps..."

and really anything you want to add some deep smokey flavour too, you could try it in a chile con carne like my recipe here or anything your imagination lead you to really! I will hopefully be working my way through their range of hot chili sauces and letting you know what they are like when I can get my hands on some.  Im a big fan of Daves Gourmet range and am slowly working my way through his hot sauces (next one Dave's Gourmet Ghost Pepper Naga Jolokia Hot Sauce). This humble looking 340g Jar of salsa from the states contains some dangerous stuff! Any chili product that comes with a warning like this "Use this product with caution. Keep away from eyes, pets and children. Not for people with heart or respiratory problems" on the packaging is something I want to try! Now I like things hot but this stuff is something else and is possibly the hottest salsa I have ever tasted! I don't know how Dave did it but the heat level from the Jalapeno and Habanero combination in this jar is way more than you would expect!!

The Jar itself claims to be the 'Hottest Salsa in the Universe!' and I think that Dave may be right I had a jar in my fridge for nearly a year well past its use by date and guess what no mould even went near it! One day I had the jar out as part of a buffet and a friend tried a bit, we found him in the kitchen with a bottle of milk crying much to our amusement. if you want to experience this then click on the picture or get some here  i want to go insane too with Dave's Gourmet Insanity Salsa

I was pleasantly surprised on receiving this hot sauce through my 'scorchio hot sauce club'. Capitan Bravo is not someone I was aware of and if I am honest would probably not have chosen this chilli if it hadn't been selected for me by luck. Which is why I think it deserves a mention and a mini hot sauce review.

The chili sauce itself comes from Mexican and is 100% HOME-MADE claiming on the bottle "an exceptional flavor for any kind of meal."

The whole feel and flavour of this chile sauce is something different to what you will be used to and this is a good thing! The sauce contains olive oil which emulsifies giving the sauce a consistency like a salad dressing which at first i found very strange. However the distinct flavours of the Mexican grown habanero, carrot, salt, spices and, onion powder combine with the oil in a wonderful way. I have had to think a bit of different ways to use this unique wonderful sauce. It make a tasty but messy taco and great to drizzle over chips or a over dull salad to bring it alive! Where every you might use a dressing in your meals try this hot sauce as a substitute.

I believe it is always good to get some Mexican spirit into you cooking so pick some Capitan Bravo Habanero Hot Sauce up here.

Blairs Original Death Sauce

Blair's Original Death SauceBlair has an amazing range of hot sauces from the basic introduction sauce to the extreme and insane sauces. Blair has been making hot sauces since 1989 and has got quite good at it too!! I have tried a number of chilli sauces from this range and so far love every one of them in different ways but they are not for the feint hearted and definitely powerful as you progress up the range.

Blair's Original Death Sauce is a good introduction sauce to this range with a perfect balance of ingredients with just enough heat to keep the hot sauce enthusiast interested with red habaneros chilli and loads of flavour to balance out the heat with vinegar, fresh cayenne chile, smashed garlic, chipotle chili, lime juice, cilantro, fresh herbs and spices. I recommend trying this sauce if you are curious about the Blair range,  I guarantee once you have tried it you will want more. Many others have fallen for Blairs skill in sauce mixology and limited edition sauces fetch thousands of dollars to collectors in the us.

My Hot Sauce Stash

Hello Everyone,

I through i would share with you some of my current hot sauce collection. Though even as I am writing this I have realised that two other boxes are missing from the photos including my authentic Mexican collection. It seems i have more chilli sauces than I remember.

Below are the remains of my mad dog hot sauce box including Mad Dog 357 Hot Sauce which has been the main feature of most of my recent BBQ's this summer so far and also a useful collection from CaJohn's chilli purees that are fantastic for cooking with including the very tasty CaJohn's Select Cayenne Puree
 .


The set below contains some nice chilli jelly's too and also some of the harder to find sauces, CaJohn's Frostbite Hot Sauce and CaJohn's Magma Hot Sauce. There is also a currently un opened bottle of Blair's death sauce which is next on my list to open! Amongst all of these there is also a great little selection box from the nice people at the South Devon chilli farm where I recently paid a visit, take a look at the pictures here.

Pleasure and Pain Origional Scorching Scotch Bonnet and Mustard Hot Sauce

Picked up this sauce through a recent present bought for me. A one year membership to a hot sauce club where they send you a different sauce each month for a year. Perfect to keep my supplies topped up! this month I received this beautiful sauce: Pleasure and Pain Smokin' Scotch Bonnet Mustard Hot Sauce


Pleasure & Pain Smokin' Scotch Bonnet & Mustard Hot SauceThe bottle says...Foxy’s all-natural blend is full of heat and freshness, ensuring the perfect balance between pleasure and pain. Toiling over bubbling pans, Foxy Red worked up a sweat creating this Scorchin’ Scotch Bonnet Sauce. She saw red and added big, juicy plum tomatoes to the pot making a rich, thick hot sauce with a cheeky hint of garlic.


With BBQ season coming up hot sauces with mustard in them are a great addition to any table. I have been using this sauce with sausages, steaks in stews, with my scrambled eggs and many more dishes to add that extra kick. The sauce is not overly hot containing mainly scotch bonnets as the fruity heat source but produces a perfect balance of ingredients including Plum Tomatoes, Cider Vinegar, Echalion Shallots,Fresh Garlic, Cane Sugar, Organic Tomato Puree, Vegetable Oil, Citric Acid, Salt, Thyme, Spices. Got this CaJohn’s hot sauce to experiment with as I was curious and I like most sauces in their range. The chance to put some heat in my drinks and cocktails with Frostbite Hot Sauce ‘The world's first white hot sauce’ caught my attention. It has a droplet insert fitted so you can add a small drop at a time. Just as well as you only need a tiny amount to have an effect! A bottle of this stuff should last quite some time. The front of the bottle says “Nothing frosty here! Extremely Hot” and I can definitely vouch for that.
It's has a watery white appearance and you can see small crystals floating in it. You need to shake the bottle before use. It disappears in any drink except for maybe the odd crystal floating on top. I was a little unlucky when I tried my bottle and put some drops on my finger to test first before adding it to a drink. I think I managed to get one of the pure crystals as it blew my head off and I’m used to strong heat.

There is some controversy over the actual heat of this sauce and dispute among chilli heads. The sauce is extremely hot and not for beginners with somewhere between 500,000 and 1,000,00 units linked to its heat. Using only the ingredients vinegar, water, salt Aquaresin of Capsicum. Based on my first experience I would class this more towards the 1,000,00 units but that was neat from the 148ml bottle. But many would disagree. I think it varies depending on what you mix it with or if you get a crystal. Either way it’s a great for your collection and for a whole range of drinks as it mixes right into the drink and doesn't float at the top like most hot sauces or extracts. Pick some up at Scorchio.

3 parts any good aged tequila (Ocho if you can get it)
3 parts Lime Juice
1 part Triple Sec
3-4 drops of CaJohn's Frostbite Hot Sauce

2 shots. Vodka
a dash of Vermouth
3-4 drops of CaJohn's Frostbite Hot Sauce

But when you try it you wont be focusing on the flavour hints first time I can tell you, but you will be smiling!


Ingredients: blueberry, vinegar, naga bih jolokia, prunes, crystallised ginger, cherries, green Tabasco chilli, black treacle, 12 Mshu extract, 15m chilli crystal
